Bun Maska at FiLLi — Soft Bun, Butter, and Chai

Bun Maska is the simplest thing on the menu and one of the easiest to love: a soft bun, split and spread thick with butter. ‘Maska’ means butter, and that's the whole idea — bread and butter, made to go with chai.

It comes from the Irani cafes of Mumbai, where a buttered bun and a hot cup were the standard order. At FiLLi it plays the same role: the thing you reach for alongside a Karak.

What is Bun Maska?

Bun Maska is a soft, slightly sweet bun cut open and spread generously with butter. No fillings, no fuss. The appeal is in the contrast — warm, pillowy bread and cool butter that softens into it.

It's a snack, not a meal — built to be torn, dunked, and finished in a few bites between sips of tea.

How FiLLi Makes It

We keep it honest: a fresh, soft bun and a proper layer of butter, served ready to dunk. Nothing clever, because it doesn't need to be — the point is to get out of the way of the bun, the butter, and the chai.

If you want more than the classic, the menu also runs to Bun Maska with honey, with honey and cheese, or with Nutella.

The Bun Maska and Karak Ritual

Bun Maska is rarely ordered on its own. The move is to pair it with a Karak or a Zafran Karak, tear a piece, dunk it just long enough for the butter and tea to meet, and eat it warm. It's a small ritual, and it's been the same one for decades.

Where to Order It
