Zafran Karak — FiLLi's Signature Saffron Chai

What is Zafran Karak?

Zafran Karak is Karak Chai with saffron brewed into it. ‘Zafran’ is the Hindi, Urdu, and Persian word for saffron, so you'll sometimes see it written as saffron chai or saffron karak. On a FiLLi menu it's Zafran Karak.

The base is a proper Karak — black tea simmered with evaporated milk, cardamom, and sugar until it's thick enough to coat the cup. Saffron goes into that simmer, releases its colour and aroma, and turns an everyday Karak into something you'd slow down for. It's served hot, in a small cup, and a second one is normal.

Kashmiri Mongra Saffron, and Why It Matters

We use Kashmiri Mongra saffron — the top grade from the Pampore region of Kashmir, only the deep-red stigma tips. It's prized for the same reasons it costs what it does: long, deep-red threads, an intense aroma, and a colour that goes a long way on very little.

Cheaper saffron, or dyed substitutes, can fake the colour but not the smell. Real Kashmiri Mongra lifts the whole cup — the floral note sits on top of the cardamom and the finish lingers. That's the difference between Karak with a bit of saffron in it and a proper Zafran Karak.

How It's Served at FiLLi

Every cup is brewed to the same recipe, with the same blend and the same saffron, so the Zafran Karak you get in Al Barsha tastes like the one you get in Sharjah. The blend ships to each cafe pre-portioned; the simmer time and the cardamom-to-milk ratio don't change.

The finish is the giveaway: a strand or two of saffron resting on the surface as it's poured, and an aroma that reaches you before the cup does.
