What is Vada Pav?

A vada is a ball of spiced mashed potato — turmeric, ginger, garlic, green chilli, curry leaves — coated in gram-flour batter and fried until golden. The pav is a soft bun. Put one inside the other with chutney and you have vada pav.

It started as workers' food in Mumbai: quick to make, easy to carry, enough to keep you going. From there it became one of the most-loved street foods in India.
